๐งฐ Required Tools & Equipment
- โ Bench scraper or flat spatula
- โ Microfiber cloth
- โ Non-abrasive sponge
- โ Drying rack
๐ฆ Materials & Supplies
- โ Coarse kosher salt
- โ 1 fresh lemon, halved
- โ Mild dish soap
- โ Food-grade mineral oil or cutting board wax
โ ๏ธ Safety Checkpoints & Warnings
- โข Never submerge the wooden board entirely in water or put it in a dishwasher to avoid cracking and warping.
- โข Keep fingers clear of the scraper edge when removing stubborn food residues.
๐ Step-by-Step Guide (5 Steps)
Scrape and Wash Surface
Hold the bench scraper at a 45-degree angle to scrape away dried food residues across the grain. Use a non-abrasive sponge with warm, soapy water to quickly wipe down both sides and all edges. Rinse rapidly under running water without letting the board soak.
- โข Board surface is clear of stuck-on food debris
- โข Water runs smoothly off the surface without puddling
- โข Leaving the board soaking in a sink of standing water
- โข Scraping aggressively against the grain, gouging the wood
Salt and Scrub with Lemon
Sprinkle a generous, even layer of coarse kosher salt across the entire board surface. Take half a cut lemon and use firm circular motions to scrub the salt into the wood grain, squeezing gently to release juice. Let the salt and citrus slurry sit on the wood for 5 minutes to lift stains and odors.
- โข A thick, cloudy paste of salt and lemon juice coats the entire top face
- โข Discoloration on the board visibly lightens
- โข Using fine table salt which dissolves too quickly to provide mechanical abrasion
- โข Rinsing immediately without letting the acid sit and sanitize
Rinse and Thoroughly Dry
Use the bench scraper to glide the spent salt slurry directly into the sink. Rinse the board thoroughly with warm water using a clean sponge to remove all salt residue. Dry immediately and vigorously with a microfiber cloth, then prop the board upright on its edge.
- โข Zero salt granules remaining on the board surface
- โข Board is standing vertically on its edge with all faces exposed to air
- โข Laying the wet board flat on the countertop to dry
- โข Leaving salt grains trapped in knife grooves
Apply Mineral Oil
Once the board is bone dry, pour a silver-dollar-sized pool of food-grade mineral oil onto the center. Use a clean microfiber cloth to rub the oil into the wood in circular motions, following the grain to ensure deep penetration. Cover all faces, sides, and handle cutouts.
- โข Wood grain deepens in color to a rich, uniform sheen
- โข No dry, pale patches remain on any side or edge
- โข Using vegetable or olive oil, which will turn rancid over time
- โข Applying oil to a damp board, sealing moisture inside
Buff and Rest
Let the oil absorb into the wood fibers for at least 20 minutes, or overnight for extremely dry boards. Take a dry, clean section of the microfiber cloth and buff the entire board vigorously to remove any unabsorbed oil. Store the board in a dry location standing on its edge or on dedicated rubber feet.
- โข Surface is satin-smooth and dry to the touch with no sticky residue
- โข Water dropped on the board beads up tightly
- โข Skipping buffing, leaving a greasy surface that collects dust
- โข Stacking other kitchenware directly onto freshly oiled wood
