๐งฐ Required Tools & Equipment
- โ Stovetop burner
- โ Wooden spoon or flat-edged wooden spatula
- โ Non-abrasive scouring pad or blue sponge
- โ Microfiber drying cloth
- โ Rubber cleaning gloves
๐ฆ Materials & Supplies
- โ Water
- โ White distilled vinegar
- โ Baking soda
- โ Bar Keepers Friend (oxalic acid cleanser)
- โ Liquid dish soap
โ ๏ธ Safety Checkpoints & Warnings
- โข Never plunge a red-hot stainless steel pan directly into cold water; thermal shock will warp the base.
- โข Do not lean directly over the pan when boiling vinegar, as concentrated acidic steam irritates eyes and airways.
- โข Avoid steel wool or harsh abrasive pads that permanently gouge the brushed finish.
๐ Step-by-Step Guide (5 Steps)
Deglaze Burnt Fond on the Stovetop
Pour enough water into the pan to cover the burnt area by at least half an inch, then add half a cup of white vinegar. Place the pan over medium heat on the stovetop and bring the mixture to a steady rolling simmer. Let it simmer for 3 to 5 minutes to soften carbonized food bonds.
- โข Liquid turns murky brown or amber as carbon lifts from the metal surface
- โข Large dark flakes loosen and float freely in the bubbling liquid
- โข Boiling on high heat until the liquid completely evaporates, re-scorching the residue
- โข Using cold tap water in an intensely hot pan right off high cooking heat
Scrape Softened Residue with Wood
While the liquid is still hot and simmering gently, take a flat-edged wooden spatula and firmly push against the charred patches. Work across the bottom in straight, overlapping strokes. Continue until all thick, raised crust has sheared off the metal.
- โข The pan bottom feels smooth under the spatula with no rough, raised obstacles
- โข The bottom stainless surface is visible through the dirty liquid
- โข Using a metal spatula or knife that scratches deep grooves into the steel
- โข Pressing lightly instead of using firm, flat shearing pressure
Apply and Scrub Baking Soda Paste
Dump the dirty water into the sink and let the pan cool until it is warm to the touch. Sprinkle 3 to 4 tablespoons of baking soda generously over the damp surface to form a wet, gritty paste. Use a blue non-abrasive sponge to scrub in tight circular motions across all stained zones.
- โข Baking soda paste turns gray or brown as it absorbs fine surface char
- โข Pan surface reflects light without dull, matte brown patches
- โข Adding too much water, which dissolves the baking soda and eliminates its mild abrasive grit
- โข Scrubbing a completely dry pan without moisture
Remove Rainbow Heat Tint and Minerals
Rinse out the baking soda paste, leaving the pan lightly damp. Sprinkle a teaspoon of Bar Keepers Friend over areas with rainbow heat tint or cloudy white mineral scale. Rub gently with the damp sponge along the concentric grain lines of the steel for 60 seconds.
- โข Rainbow discoloration and cloudy white calcium haze instantly disappear
- โข Steel displays a uniform, bright, silver sheen
- โข Leaving oxalic acid powder on the steel for more than two minutes, which can cause micro-etching
- โข Scrubbing against the visible circular grain of the steel
Final Soap Wash and Buff Dry
Squirt a dime-sized amount of liquid dish soap into the pan and wash thoroughly with warm water to neutralize and remove all chemical residues. Rinse completely under running water. Immediately dry the entire surface inside and out using a clean microfiber cloth, buffing until bone dry.
- โข Water sheets evenly off the surface without beading around leftover grease
- โข Zero water spots, streaks, or residue visible under overhead lighting
- โข Letting the pan air dry on a rack, which causes immediate tap-water mineral spotting
- โข Incomplete rinsing leaving a powdery film

Don’t have everything?
- No Bar Keepers Friend? Paste made of 3 parts baking soda and 1 part fresh lemon juice
- No White distilled vinegar? 2 tablespoons cream of tartar mixed into 2 cups water
- No Wooden spatula? Rigid heat-safe silicone spatula or flat nylon scraper
